While Indigenous peoples in Mesoamerica cultivated avocados for over 10,000 years, commercial avocado processing only took off in the late 20th century. Traditionally, avocados presented a huge logistical headache for commercial food brands because the fruit's natural enzymes cause rapid browning (polyphenol oxidase) as soon as the flesh touches oxygen.

The real breakthrough came in the late 1990s and early 2000s with the adoption of High-Pressure Processing (HPP). This ultra-high water pressure technique allowed processors to preserve fresh guacamole and avocado pulp without heat or chemical preservatives, transforming avocados into a year-round, multi-billion-dollar global export industry.
